Marry Me Chicken

A soul-warming chicken dish enveloped in a velvety creamy sauce with sun-dried tomatoes and fresh basil that brings loved ones together.

  • 4 boneless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Season both sides of chicken breasts with salt and pepper, and add them to the skillet. Cook until golden brown, about 6-7 minutes per side.
  3. Rest the chicken on a plate to allow juices to redistribute.
  4. Sauté minced garlic in the same pan for about 1 minute until fragrant.
  5. Create the creamy sauce by pouring in heavy cream, stirring while bringing it to a gentle simmer.
  6. Add grated Parmesan cheese, sun-dried tomatoes, and fresh basil, and stir until harmonized.
  7. Return the chicken to the skillet, spooning the sauce over to infuse flavors.
  8. Cover and simmer for 5-10 minutes until chicken is cooked through and sauce thickens.
  9. Serve warm, drizzling extra sauce over the chicken.

Notes

For a twist, try adding cooked spinach or mushrooms. Can be made dairy-free by substituting heavy cream with coconut cream.
