Luscious Lemon Zucchini Bread

  • 1 cup all-purpose flour

  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon lemon zest

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together the grated zucchini, granulated sugar, and vegetable oil until blended.
  3. Beat in the eggs one at a time, then blend in the lemon zest, lemon juice, and vanilla extract.
  4. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Fold the dry mixture into the wet ingredients until just combined, avoiding overmixing.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.
