Loaded Potato Taco Bowls

A comforting bowl filled with creamy mashed potatoes, spiced ground meat, zesty salsa, and vibrant toppings for a delightful meal.

Ingredients

  • 4 large Russet potatoes
  • 1 lb ground beef (or turkey/plant-based meat)
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1/2 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 jalapeños, sliced
  • 1 avocado, diced
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Butter, for mashing
  • Cream or sour cream, for mashing

Instructions

  1. Peel and chop the potatoes into even cubes. In a large pot of boiling salted water, cook until tender (15-20 minutes). Drain and mash with butter and cream until smooth. Season with salt and pepper.
  2. In a skillet, brown the ground meat over medium heat. Drain excess fat and add taco seasoning, stirring well to coat. Simmer for a few minutes.
  3. Spoon a portion of mashed potatoes into bowls. Top with seasoned meat and your choice of toppings such as diced tomatoes, green onions, jalapeños, and sour cream.
  4. Garnish with fresh cilantro or green onions and serve hot.

Notes

Make-ahead tips: Prepare potatoes and meat a day in advance. Store separately in the fridge.
