  • 1 lb ground beef or turkey
  • 1 cup shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 1/2 cup salsa
  • 1/4 cup sliced jalapeños (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground meat over medium heat until browned. Drain excess fat.
  4. Add taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and heat through.
  5. Stuff each bell pepper with the meat mixture and top with shredded cheddar cheese.
  6. Place the stuffed peppers in a baking dish and cover with foil.
  7. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
