- 4 large bell peppers
- 1 lb ground beef or turkey
- 1 cup shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 packet taco seasoning
- 1/2 cup salsa
- 1/4 cup sliced jalapeños (optional)
- Fresh cilantro for garnish
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground meat over medium heat until browned. Drain excess fat.

- Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
