Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a bowl, sift together almond flour and powdered sugar.
  3. In a separate bowl, beat egg whites until foamy, then add cream of tartar and gradually add granulated sugar until stiff peaks form.
  4. Gently fold the almond flour mixture into the egg whites, adding lemon zest and food coloring if desired.
  5. Pipe small circles onto the prepared baking sheets and let them sit for 30 minutes to form a skin.
  6. Bake for 15-20 minutes, then let cool completely.
  7. For the filling, beat softened butter with lemon juice and powdered sugar until smooth.
  8. Sandwich the macarons with the lemon filling and refrigerate for at least 24 hours before serving.
