Lemon Chicken Orzo

A delightful and comforting dish featuring tender chicken, vibrant spinach, and chewy orzo pasta, all tossed in a bright lemon sauce.

  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 lemon, juiced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add minced garlic and sauté until fragrant.
  3. Toss in the diced chicken, cooking until golden.
  4. Stir in orzo and pour in the chicken broth. Bring to a boil, then reduce heat to simmer.
  5. Cook for approximately 10 minutes, allowing the orzo to absorb flavors.
  6. Add fresh spinach and drizzle in the lemon juice, stirring gently.
  7. Remove from heat and fold in the Parmesan cheese.

Notes
