  • 1 lb Kielbasa sausage, sliced
  • 4 medium potatoes, diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Brown the Kielbasa: In a large pot, heat it over medium heat. Add the sliced kielbasa, allowing it to brown for about 5-7 minutes.
  2. Sauté the Onion: Toss in the chopped onion, stirring until it turns translucent, around 3-4 minutes.
  3. Add Vegetables: Stir in the diced potatoes and sliced carrots, letting them mingle with the onion and sausage for another 2-3 minutes.
  4. Pour in the Broth: Add the chicken or vegetable broth to the pot, bringing the mixture to a boil.
  5. Simmer: Reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  6. Add Cream: Stir in the heavy cream, season with salt and pepper to taste.
  7. Garnish & Serve: Ladle the soup into bowls and top with fresh parsley.

Notes

For creamier results, consider blending half of the soup and then stirring it back into the pot. This soup keeps well in the fridge and can also be made in an Instant Pot or slow cooker.
