Key Lime Meringue Pie: A Slice of Sunshine Awaits!

A refreshing and tangy dessert featuring a creamy key lime filling topped with fluffy meringue.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1/3 cup granulated sugar
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup key lime juice
  • 1 teaspoon lime zest
  • 4 large egg whites
  • ¼ teaspoon cream of tartar
  • ½ cup granulated sugar (for meringue)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and 1/3 cup sugar until combined. Press into the bottom of a pie dish.
  3. Bake the crust for 8-10 minutes until golden. Remove and let cool.
  4. In another bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth.
  5. Pour the key lime filling into the cooled crust.
  6. In a clean bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add ½ cup sugar and beat until stiff peaks form.
  7. Spread the meringue over the key lime filling, sealing the edges.
  8. Bake for 10-12 minutes until the meringue is golden brown.
  9. Let cool before serving. Enjoy!
