Keto Zucchini Tots

A delightful, low-carb snack bursting with flavor, perfect for any occasion.

Ingredients

  • 1 medium zucchini, grated and squeezed to remove moisture
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup almond flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grate the zucchini using a box grater.
  3. Squeeze out the moisture from the grated zucchini.
  4. Combine the squeezed zucchini, cheddar, Parmesan, egg, almond flour, garlic powder, onion powder, salt, pepper, and parsley in a mixing bowl.
  5. Shape the mixture into small tots using your hands or a cookie scoop.
  6. Prepare a baking sheet lined with parchment paper and place the tots on it.
  7. Bake for 20–25 minutes, flipping halfway, until golden and crispy.
  8. Cool slightly and serve with your favorite dipping sauce.

Notes

For a spicier version, add diced jalapeños. These tots are perfect for freezing and reheating.
