Keto Fiber Bomb

  • 1/4 cup almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons psyllium husk
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 2 tablespoons olive oil or melted coconut oil
  • Sweetener to taste (optional)
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. Combine almond flour, coconut flour, psyllium husk, baking powder, and salt in a bowl and whisk together until fully incorporated.
  2. Mix water, olive oil, optional sweetener, and vanilla extract in another bowl until well blended.
  3. Pour the wet ingredients into the dry ingredients and mix thoroughly until a cohesive dough forms.
  4. Let the mixture sit for about 5 minutes to allow the psyllium to absorb moisture.
  5. Shape the mixture into balls or flatten them into bars.
  6. Place them on a baking sheet lined with parchment paper and bake at 350°F (175°C) for about 25–30 minutes.
  7. Cool for 10 minutes before transferring to a wire rack.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for longer-lasting enjoyment.
