Keto Crispy Reuben Roll-Ups are a delicious low-carb treat that combines the classic flavors of a Reuben sandwich in a crispy, easy-to-make roll-up form.

Ingredients

  • 8 oz corned beef, sliced
  • 4 oz Swiss cheese, sliced
  • 1 cup sauerkraut, drained
  • 4 large lettuce leaves
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lay out the lettuce leaves on a flat surface.
  3. Spread a thin layer of Dijon mustard on each lettuce leaf.
  4. Layer the corned beef, Swiss cheese, and sauerkraut on top of the mustard.
  5. Roll the lettuce leaves tightly to form roll-ups.
  6. Brush the outside of the roll-ups with olive oil.
  7. Place the roll-ups on a baking sheet and bake for 10-12 minutes until crispy.
  8. Remove from the oven and let cool slightly before slicing.

Notes

  • For extra flavor, add a sprinkle of caraway seeds before rolling.
  • These roll-ups can be served with additional mustard for dipping.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
