8 oz corned beef, sliced
4 oz Swiss cheese, sliced
1 cup sauerkraut, drained
4 large lettuce leaves
2 tbsp Dijon mustard
1 tbsp olive oil
Instructions
Preheat the oven to 400°F (200°C).
Lay out the lettuce leaves on a flat surface.
Spread a thin layer of Dijon mustard on each lettuce leaf.
Layer the corned beef, Swiss cheese, and sauerkraut on top of the mustard.
Roll the lettuce leaves tightly to form roll-ups.
Brush the outside of the roll-ups with olive oil.
Place the roll-ups on a baking sheet and bake for 10-12 minutes until crispy.
Remove from the oven and let cool slightly before slicing.
Notes
For extra flavor, add a sprinkle of caraway seeds before rolling.
These roll-ups can be served with additional mustard for dipping.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
