Delicious taquitos filled with shredded chicken, bacon, cheese, and ranch dressing, perfect for a low-carb lifestyle.

  • 2 cups cooked chicken, shredded
  • 4 strips of bacon, cooked and crumbled
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Low-carb tortillas
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, green onions, avocado

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the shredded chicken, crumbled bacon, ranch dressing, and shredded cheese in a mixing bowl.
  3. Fill a low-carb tortilla with the chicken mixture, leaving space at the edges.
  4. Roll it up tightly, tucking in the ends.
  5. Place the taquitos seam-side down on a prepared baking sheet.
  6. Bake for 20-25 minutes or until crispy and golden brown.
  7. Serve warm with optional toppings.

Notes

Make the filling in advance and store it in the fridge for up to 24 hours. You can also use an air fryer for a quicker method.
