- 4 chicken thighs, boneless and skinless
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 mango, diced
- 2 cups cabbage, shredded
- 1 red bell pepper, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup mayonnaise
- 2 tablespoons honey
- 1 lime, juiced
- Salt and pepper to taste
- Preheat the grill to medium-high heat.
- Rub the chicken thighs with jerk seasoning and olive oil.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- In a bowl, combine the mango, cabbage, red bell pepper, and cilantro.
- In a separate bowl, whisk together the mayonnaise, honey, lime juice, salt, and pepper to make the dressing.
- Once the chicken is cooked, let it rest for a few minutes before slicing.
- Assemble the bowls by placing the mango slaw at the bottom, topped with sliced jerk chicken and drizzled with honey lime cream.
Notes
- For a spicier kick, add more jerk seasoning to the chicken.
- This dish can be served warm or cold.
