Jerk Chicken & Mango Slaw Bowls with Honey Lime Cream Delight!

A delicious and vibrant dish featuring spicy jerk chicken served over a refreshing mango slaw, topped with a creamy honey lime dressing.

  • 4 chicken thighs, boneless and skinless
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 mango, diced
  • 2 cups cabbage, shredded
  • 1 red bell pepper, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub the chicken thighs with jerk seasoning and olive oil.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  4. In a bowl, combine the mango, cabbage, red bell pepper, and cilantro.
  5. In a separate bowl, whisk together the mayonnaise, honey, lime juice, salt, and pepper to make the dressing.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing.
  7. Assemble the bowls by placing the mango slaw at the bottom, topped with sliced jerk chicken and drizzled with honey lime cream.

Notes

  • For a spicier kick, add more jerk seasoning to the chicken.
  • This dish can be served warm or cold.
