- Sweet potato starch noodles – 200g
- Beef (sliced) – 150g
- Carrot (julienned) – 1 medium
- Spinach – 100g
- Onion (sliced) – 1 medium
- Bell pepper (sliced) – 1 medium
- Garlic (minced) – 2 cloves
- Soy sauce – 3 tablespoons
- Sesame oil – 2 tablespoons
- Vegetable oil – for frying
- Sesame seeds – for garnish
- Soak the sweet potato starch noodles in warm water for about 30 minutes.
- In a pan, heat vegetable oil and stir-fry the beef until cooked. Remove and set aside.
- In the same pan, stir-fry the garlic, onion, carrot, and bell pepper until tender.
- Add the spinach and cook until wilted.
- Drain the noodles and add them to the pan with the vegetables.
- Add the cooked beef back to the pan.
- Pour in the soy sauce and sesame oil, and stir-fry everything together for a few minutes.
- Garnish with sesame seeds before serving.
Notes
- For a vegetarian version, omit the beef and add more vegetables.
- Adjust the soy sauce to taste for saltiness.
- Japchae can be served hot or cold.
