  • 8 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup small pasta (like acini di pepe)
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 onion, diced

Instructions

  1. In a large bowl, combine ground beef, ground pork, Parmesan cheese, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, heat chicken broth over medium heat. Add diced onion, carrot, and celery, and cook until softened.
  3. Add the meatballs to the pot and simmer until cooked through, about 10-15 minutes.
  4. Stir in the pasta and cook according to package instructions until al dente.
  5. Add the fresh spinach and cook until wilted.
