Irish Chicken in Whiskey Cream Sauce

  • 4 chicken breasts
  • 1 cup Irish whiskey
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Fresh parsley, for garnish
  • Irish cheddar cheese, for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Season both sides of the chicken breasts with salt and pepper, then place them in the pot to brown.
  3. Set the chicken aside once browned.
  4. Sauté the onion and garlic in the same pot until the onion is translucent.
  5. Pour in the whiskey and let it reduce for 3-5 minutes.
  6. Stir in the heavy cream, bringing it to a gentle simmer.
  7. Return the chicken to the pot, cover, and simmer for 20 minutes.
  8. Garnish with parsley and serve with Irish cheddar cheese on the side.

Notes

For a lighter option, you can substitute heavy cream with half-and-half.
