Honey Mustard Chicken Quinoa Power Bowl: Boost Your Health!

  • 1 cup quinoa
  • 2 cups water
  • 2 chicken breasts
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a pot, combine quinoa and water, bring to a boil, then reduce heat and simmer for 15 minutes or until water is absorbed.
  3. While quinoa cooks, mix honey, Dijon mustard, olive oil, salt, and pepper in a bowl to create the marinade.
  4. Marinate the chicken breasts in the honey mustard mixture for at least 30 minutes.
  5. Grill or pan-sear the chicken over medium heat for 6-7 minutes on each side or until fully cooked.
  6. Steam the broccoli until tender, about 5 minutes.
  7. Once the chicken is cooked, slice it into strips.
  8. In a bowl, layer quinoa, broccoli, cherry tomatoes, cucumber, and top with sliced chicken.
  9. Drizzle any remaining honey mustard sauce over the top before serving.

Notes

  • For a vegetarian option, substitute chicken with grilled tofu.
  • Feel free to add other vegetables like bell peppers or spinach.
  • This bowl can be served warm or cold.
