- 1 cup quinoa
- 2 cups water
- 2 chicken breasts
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1 tablespoon olive oil
- 1 cup broccoli florets
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- Salt and pepper to taste
- Rinse the quinoa under cold water and drain.
- In a pot, combine quinoa and water, bring to a boil, then reduce heat and simmer for 15 minutes or until water is absorbed.
- While quinoa cooks, mix honey, Dijon mustard, olive oil, salt, and pepper in a bowl to create the marinade.
- Marinate the chicken breasts in the honey mustard mixture for at least 30 minutes.
- Grill or pan-sear the chicken over medium heat for 6-7 minutes on each side or until fully cooked.
- Steam the broccoli until tender, about 5 minutes.
- Once the chicken is cooked, slice it into strips.
- In a bowl, layer quinoa, broccoli, cherry tomatoes, cucumber, and top with sliced chicken.
- Drizzle any remaining honey mustard sauce over the top before serving.

- For a vegetarian option, substitute chicken with grilled tofu.
- Feel free to add other vegetables like bell peppers or spinach.
