Honey Garlic Butter Roasted Carrots

Sweet and savory roasted carrots coated in honey garlic butter that caramelize to perfection.

  • 1 pound carrots, peeled and cut into sticks
  • 4 tablespoons unsalted butter
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or thyme) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Melt the unsalted butter in a saucepan over medium heat, then stir in the honey and minced garlic, simmering for one minute.
  3. Toss the carrot sticks in a mixing bowl with the honey garlic butter mixture, seasoning with salt and pepper.
  4. Spread the coated carrots on a clean, rimmed baking sheet in a single layer.
  5. Roast for 20 to 25 minutes, stirring halfway through, until fork-tender and golden brown.
  6. Garnish with fresh herbs before serving hot.

Notes

Make ahead by coating the carrots a few hours before roasting. Can also be cooked in an air fryer at 375°F (190°C) for about 15 minutes.
