  • 1 teaspoon vanilla extract

  • Zest of 1 lemon

For the lemon glaze:

  • 1 cup powdered sugar
  • 23 tablespoons lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Mix the wet ingredients in a large bowl: zucchini, blueberries, vegetable oil, eggs, and vanilla extract.
  3. Combine the dry ingredients in another bowl: all-purpose flour, whole wheat flour, sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and lemon zest.
  4. Incorporate the wet mixture into the dry ingredients and fold gently until just combined.
  5. Transfer the batter to the prepared loaf pan, smoothing the top.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool for 10 minutes in the pan before transferring to a wire rack.
  8. Prepare the glaze by mixing powdered sugar and lemon juice until smooth. Drizzle over the cooled bread.

For best results, use room temperature ingredients and squeeze out excess moisture from the zucchini.
