Herby Ricotta Stuffed Peppers

Delightful and vibrant herby ricotta stuffed peppers, perfect for a wholesome dinner or as a side dish. Creamy ricotta mixed with fresh herbs is stuffed into sweet bell peppers and baked to perfection.

  • 4 large bell peppers
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut off the tops of the bell peppers and scoop out the seeds.
  3. In a large mixing bowl, combine the ricotta cheese, grated parmesan cheese, chopped basil, chopped parsley, minced garlic, and a sprinkle of salt and pepper.
  4. Mix until it transforms into a smooth, creamy filling.
  5. Generously stuff each pepper with the cheese mixture, pressing down lightly.
  6. Place the stuffed peppers in a baking dish and drizzle olive oil over the top.
  7. Cover the dish with aluminum foil and bake for 30 minutes.
  8. Remove the foil and return the dish to the oven for an additional 10-15 minutes.
  9. Serve warm straight from the oven.

Notes

Make ahead and store in the refrigerator for up to 24 hours before baking. Experiment with different cheese or add chopped spinach for variety.
