Herbed Ricotta Stuffed Chicken Rolls

Delicious chicken rolls stuffed with creamy herbed ricotta and fresh spinach, baked to golden perfection.

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup chopped spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh herbs (basil, parsley, or thyme)
  • Salt and pepper, to taste
  • Olive oil
  • Salad (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix together ricotta cheese, chopped spinach, grated Parmesan, fresh herbs, salt, and pepper until well combined.
  3. Pound each chicken breast to an even thickness of about 1/2 inch.
  4. Fill each chicken breast with the ricotta mixture, leaving the edges free.
  5. Roll the chicken breasts tightly and secure them with toothpicks or kitchen twine.
  6. Heat olive oil in a skillet over medium heat and sear the chicken rolls on all sides until golden brown, about 3-4 minutes per side.
  7. Transfer the seared chicken rolls to a baking dish and bake for 25-30 minutes, or until cooked through.
  8. Serve with a side salad.

Notes

For a dairy-free option, use lactose-free ricotta or cashew cheese. You can also substitute chicken with turkey or use eggplant for a vegetarian twist.
