Hearty Lentil Stew & Creamy Mashed Potato Bowl

A comforting blend of lentil stew served over creamy mashed potatoes, bursting with flavor and perfect for cozy meals.

  • 1 cup lentils (green or brown)
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 pounds potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/2 cup milk or plant-based milk

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  2. Introduce the minced garlic, dried thyme, and smoked paprika. Cook for 1 minute until fragrant.
  3. Stir in the lentils and pour in the vegetable broth. Bring to a boil, then reduce to a simmer. Let cook for 30-40 minutes until lentils are tender. Season with salt and pepper.
  4. Fill a large pot with water and add cubed potatoes. Boil until fork-tender, then drain and return to pot.
  5. Add butter and milk to the potatoes. Use a potato masher to achieve a creamy texture.
  6. Serve the lentil stew ladled over the creamy mashed potatoes, and enjoy!

Notes

Make-ahead tips: The lentil stew can be made in advance and stored in the fridge or frozen for later. Reheat gently on the stove.
