  • 1 can Beans (Black or Pinto)
  • 1 cup Corn (Fresh or Canned)
  • 1 Avocado or Yogurt (Creamy Topping)
  • 2 tsp Spices (Cumin, Chili Powder, Salt)
  • Juice of 1 Lime
  • Fresh Cilantro (Optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the sweet potatoes by peeling and cutting them into equal-sized cubes.
  3. Roast the sweet potatoes on a baking sheet for about 25 minutes, turning halfway through.
  4. Combine the roasted sweet potatoes, beans, and corn in a mixing bowl.

  6. Finish with a drizzle of fresh lime juice.
