Healthy Roasted Potatoes

Deliciously roasted potatoes with a crispy exterior and creamy interior, perfect as a side dish for any occasion.

Ingredients

  • 2 lbs Yukon Gold or red potatoes, washed and cubed
  • 3 tbsp extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh rosemary or thyme, chopped
  • Optional: 1 tsp paprika, cumin, or chili powder

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the potatoes into even-sized cubes, about 1-inch in diameter.
  3. Combine the potatoes, olive oil, garlic, sea salt, pepper, and herbs in a mixing bowl. Toss until well-coated.
  4. Spread the seasoned potatoes evenly on a baking sheet.
  5. Roast in the oven for 30-35 minutes, flipping halfway for even cooking.
  6. Remove when golden and crispy, serve immediately, garnished with fresh herbs if desired.

Notes

Make ahead by prepping the potatoes and storing them in the fridge for up to 24 hours before baking. For a crispy finish, consider reheating leftovers in an air fryer.
