Hawaiian Chicken Sheet Pan

A delightful and colorful dish featuring juicy chicken thighs, sweet pineapple, and vibrant bell peppers, all roasted to perfection with a flavorful soy sauce marinade.

  • 4 Chicken Thighs
  • 1 cup Pineapple Chunks
  • 2 Bell Peppers (red, yellow, and green)
  • 1/4 cup Soy Sauce
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together soy sauce, olive oil, minced garlic, grated ginger, salt, and pepper in a large mixing bowl.
  3. Marinate the chicken thighs in the marinade for at least 30 minutes.
  4. Arrange the marinated chicken thighs, pineapple chunks, and sliced bell peppers on a sheet pan.
  5. Drizzle any remaining marinade over the top.
  6. Roast for 25-30 minutes until the chicken is cooked through and veggies are tender.
  7. Serve warm and enjoy!

Notes

For deeper flavors, marinate chicken overnight. Feel free to customize vegetables as desired.
