  • 1 lb shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 cup corn, fresh or frozen
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine shrimp with olive oil, garlic powder, salt, and pepper.
  3. Grill the shrimp for 2-3 minutes on each side until cooked through.
  4. In another bowl, mix corn, cherry tomatoes, red onion, and cilantro to make the corn salsa.
  5. In a small bowl, whisk together sour cream, mayonnaise, and lemon juice for the creamy garlic sauce.
  6. Assemble the bowl by placing grilled shrimp, avocado, and corn salsa on a bed of rice or greens.
  7. Drizzle with creamy garlic sauce and serve immediately.

Notes

  • Feel free to add other vegetables to the corn salsa.
