- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1/2 cup molasses
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/4 cup cream cheese, softened
- 1/4 cup unsweetened whipped cream
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, cream together the butter and brown sugar until light and fluffy.
- Add the egg, molasses, and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are firm. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- In a separate bowl, beat together the powdered sugar, cream cheese, and whipped cream until smooth.
- Once the cookies are cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie to form a sandwich.
- Repeat with the remaining cookies and filling.
