  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1/4 cup cream cheese, softened
  • 1/4 cup unsweetened whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the egg, molasses, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are firm. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  8. In a separate bowl, beat together the powdered sugar, cream cheese, and whipped cream until smooth.
  9. Once the cookies are cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie to form a sandwich.
  10. Repeat with the remaining cookies and filling.

  • Store the whoopie pies in an airtight container for up to a week.
  • For a spicier flavor, add more ginger or cinnamon to the cookie dough.
  • These pies can be frozen for up to 3 months; just thaw before serving.
