  • 1 ½ cups gingerbread cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix gingerbread cookie crumbs with melted butter until well combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add the vanilla extract and mix well.
  6. Incorporate the eggs one at a time, mixing well after each addition.
  7. Add the ground ginger, cinnamon, nutmeg, and cloves, and mix until combined.
  8. Fold in the sour cream until smooth.
  9. Pour the cheesecake batter over the crust in the springform pan.
  10. Bake for 50-60 minutes or until the center is set but slightly jiggly.
  11. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  12. Refrigerate for at least 4 hours or overnight before serving.

Notes

  • For a stronger ginger flavor, add more ground ginger to the batter.
  • Top with whipped cream and additional gingerbread cookies for decoration.
  • This cheesecake can be made a day in advance for better flavor.
