Garlic Mushroom Rice Pilaf

A fragrant and flavorful side dish featuring fluffy rice, sautéed garlic, and earthy mushrooms, garnished with fresh parsley.

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Sauté the chopped onion and minced garlic until the onion turns translucent, about 3-4 minutes.
  3. Add the sliced mushrooms and cook until softened, about 5 minutes.
  4. Incorporate the rice, stirring for an additional minute to toast it slightly.
  5. Pour in the vegetable broth and season with salt and pepper.
  6. Cook to a vigorous boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
  7. Fluff the rice with a fork and garnish with fresh parsley before serving.

Notes

Customize by adding cooked proteins or mixing in other vegetables. Store leftovers in an airtight container for up to 4 days.
