- 1 large eggplant, sliced into 1/2 inch rounds
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs, beaten
- Olive oil for drizzling
- Preheat the oven to 400°F (200°C).
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic, oregano, basil, salt, and pepper.
- Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture.
- Place the coated eggplant slices on a baking sheet lined with parchment paper.
- Drizzle olive oil over the slices.
- Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
