  • 1 large eggplant, sliced into 1/2 inch rounds
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix breadcrumbs, Parmesan cheese, garlic, oregano, basil, salt, and pepper.
  3. Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture.
  4. Place the coated eggplant slices on a baking sheet lined with parchment paper.
  5. Drizzle olive oil over the slices.
  6. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
