1 lb baby potatoes, halved
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat the oven to 400°F (200°C).
In a large pot, boil the halved baby potatoes until fork-tender, about 10-15 minutes.
Drain the potatoes and set aside.
In a large skillet, melt 2 tablespoons of butter over medium-high heat.
Add the steak bites to the skillet, season with salt and pepper, and cook until browned, about 3-4 minutes.
Remove the steak from the skillet and set aside.
In the same skillet, add the remaining butter and minced garlic, cooking until fragrant.
Add the cooked potatoes and thyme to the skillet, tossing to coat in the garlic butter.
Return the steak to the skillet, mixing everything together.
Transfer the mixture to a baking dish and bake for 10 minutes.
Garnish with fresh parsley before serving.
Notes
For extra flavor, marinate the steak bites in garlic and herbs for a few hours before cooking.
Feel free to add vegetables like bell peppers or onions for more variety.
