Garlic Butter Steak Bites

Succulent steak bites seared with garlic and butter, served with tender zucchini for an indulgent meal ready in just 15 minutes.

Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Prep the steak: Pat the steak bites dry with paper towels and season them with salt and pepper.
  2. Heat the oil: Pour olive oil into a large skillet and heat over medium-high until shimmering.
  3. Sear the steak: Add steak bites in a single layer and sear for 1-2 minutes on each side.
  4. Remove the steak from the skillet and let it rest.
  5. Add garlic: Toss butter into the skillet, then add minced garlic and stir for about 30 seconds.
  6. Cook the zucchini: Add zucchini and cook for 3-5 minutes until tender-crisp.
  7. Combine everything: Return the steak to the skillet and toss to coat in garlic butter for another 1-2 minutes.
  8. Garnish and serve: Sprinkle with fresh parsley and serve immediately.

Notes

Make ahead by cubing steak and prepping zucchini in advance. Can also be cooked in an air fryer.
