French Onion Gnocchi

A comforting bowl of French Onion Gnocchi featuring caramelized onions, rich broth, and a cheesy topping.

Ingredients

Scale
  • 1 pound potato gnocchi
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cups beef or vegetable broth
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Caramelize the onions: Heat the butter and olive oil in a large skillet over medium heat. Add the thinly sliced onions and sauté, stirring occasionally, until they are deep golden brown and caramelized—about 15-20 minutes.
  2. Season: Stir in the thyme, salt, and pepper, cooking for an additional minute until fragrant.
  3. Simmer: Pour in the broth, bringing it to a gentle simmer. Lower the heat and let it cook together for about 10 minutes.
  4. Prepare the gnocchi: Meanwhile, cook the gnocchi according to package instructions in a separate pot. Drain and gently fold them into the onion mixture.
  5. Bake: Preheat your oven to 400°F (200°C). Transfer the gnocchi mixture into a baking dish, then top with shredded Gruyère and grated Parmesan.
  6. Golden toppings: Bake for 15-20 minutes, or until the cheese is bubbling and golden brown.
  7. Serve: Dish out while still warm and enjoy.

Notes

Make-ahead tip: Caramelize onions a day prior and store in the fridge. For quicker cooking, use an air fryer.
