Instructions

  1. Separate the eggs: In one bowl, whisk the egg yolks with milk, vanilla extract, and lemon zest until smooth.
  2. Mix the dry ingredients: In another bowl, sift together the flour, baking powder, and granulated sugar. Combine the flour mixture with the yolk mixture until no lumps remain.
  3. Whisk the egg whites: Use an electric mixer to whip the egg whites and white vinegar until soft peaks form. Gradually add the remaining sugar and continue whipping until stiff peaks form.
  4. Fold gently: Incorporate a third of the whipped egg whites into the yolk batter using a spatula. Gradually add the remaining egg whites, being gentle to preserve the airiness.
  5. Heat the skillet: Preheat your nonstick skillet over low to medium heat and lightly grease it with oil.
  6. Scoop the batter: Place generous mounds of batter into the skillet, leaving space to expand.
  7. Cover and cook: Reduce the heat to low, cover the pan, and cook for around 4-5 minutes until golden. Flip and cook for an additional 4-5 minutes.
  8. Check for doneness: Press the center gently; if it springs back, it’s ready!
