Mediterranean Chicken Tenders

Deliciously tender chicken tenders marinated in olive oil, garlic, and lemon for a burst of Mediterranean flavor.

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1 lb chicken tenders, trimmed
  • Fresh parsley, chopped
  • Lemon wedges

Instructions

  1. Marinate the Chicken: In a mixing bowl, whisk together olive oil, minced garlic, fresh lemon juice, oregano, paprika, salt, and pepper. Add your chicken tenders to the bowl, ensuring they’re evenly coated in the marinade. Cover with plastic wrap and let sit for at least 30 minutes, ideally in the refrigerator.
  2. Preheat Your Cooking Method: If using an oven, preheat to 400°F (200°C). Line a baking sheet with parchment paper. If opting for an air fryer, preheat to 375°F (190°C).
  3. Arrange the Chicken: Lay the marinated chicken tenders out in a single layer on the baking sheet or in the air fryer basket.
  4. Cook the Chicken: For baking, place the baking sheet in the oven and cook for 20-25 minutes, flipping halfway through. For air frying, cook for about 10-12 minutes, flipping halfway through, until crispy.
  5. Garnish & Serve: Garnish the tenders with chopped parsley and serve with lemon wedges.

Notes

Marinate chicken tenders a day in advance for deeper flavor. Can be served with a variety of dips like tzatziki.
