Flavor-Packed High-Protein Sausage Pancake Mini Muffins

Delicious mini muffins combining savory sausage and fluffy pancake texture, perfect for breakfast or snacking.

  • 1 cup ground sausage
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 400°F (205°C) and generously grease a mini muffin tin.
  2. Combine the ground sausage, flour, baking powder, milk, eggs, maple syrup, and salt in a large mixing bowl. Stir until just mixed.
  3. Spoon the mixture into each muffin cup, filling them about ¾ full.
  4. Slide the muffin tin into the oven and bake for approximately 15 minutes.
  5. Remove the muffins from the oven, cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

You can prepare the batter the night before and store in the refrigerator. Rotate the muffin tin halfway through baking for even cooking.
