A delightful and quick take on classic egg rolls, packed with savory flavors and fresh vegetables, all without the fuss of frying.

Ingredients

  • 1 pound ground pork or chicken
  • 1 tablespoon sesame oil
  • 4 cups coleslaw mix (cabbage and carrots)
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • Optional toppings: sesame seeds, additional green onions

Instructions

  1. Heat sesame oil in a large skillet over medium heat until it shimmers.
  2. Cook the ground meat, breaking it up, until golden brown, about 5-7 minutes.
  3. Add garlic and ginger, cooking for an additional minute.
  4. Stir in the coleslaw mix and cook until cabbage softens, about 5 minutes.
  5. Pour in soy sauce and rice vinegar, stirring well for 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with optional toppings.
