Easy Parmesan Zucchini Rings that Everyone Will Love!

A simple and delicious recipe for crispy Parmesan zucchini rings that are perfect as a snack or side dish.

  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchinis into 1/4 inch thick rounds.
  3. In a bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini slice into the egg, then coat with the breadcrumb mixture.
  6. Place the coated zucchini rings on a baking sheet lined with parchment paper.
  7. Spray the tops with olive oil spray.
  8. Bake for 20-25 minutes or until golden brown and crispy.
  9. Serve warm and enjoy!

Notes

  • For extra flavor, add Italian seasoning to the breadcrumb mixture.
