Vegetable Quinoa Stir-Fry

  • 1 cup Quinoa
  • 2 cups Water
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 cup Bell Peppers, sliced
  • 1 cup Broccoli florets
  • 1 cup Carrots, thinly sliced
  • 3 tablespoons Low-sodium Soy Sauce

Instructions

  1. Rinse the quinoa under cold water using a colander.
  2. Cook the rinsed quinoa in a medium pot with water for about 15 minutes.
  3. Sauté the garlic and ginger in olive oil over medium heat.
  4. Add the sliced bell peppers, broccoli, and carrots, stir-frying until tender.
  5. Combine the cooked quinoa with the sautéed vegetables and soy sauce.
