Festival Inspired Dish

A vibrant and flavorful dish inspired by festival food, guaranteed to transport you into a celebration.

Ingredients

  • 1 pound chicken or tempeh
  • 2 bell peppers, chopped
  • 1 onion, chopped
  • 1 cup corn, fresh or frozen
  • 2 tablespoons cumin
  • 2 tablespoons paprika
  • Salt to taste
  • Cooking oil, for sautéing
  • Fresh herbs for garnish
  • Lime juice, for serving

Instructions

  1. Prep the ingredients: Wash and chop your vegetables into bite-sized pieces.
  2. Marinate your protein in the spice mixture for at least 30 minutes.
  3. Heat the oil in a large pot over medium heat and sauté the onions until soft.
  4. Add your marinated protein and cook until golden brown.
  5. Toss in the vegetables and stir gently.
  6. Sprinkle the spices and season with salt, allowing it to simmer for 10-15 minutes.
  7. Serve on a ceramic platter and garnish with fresh herbs and lime juice.

Notes

Make sure to not overcrowd the pot while cooking. This dish can be made ahead of time, just store ingredients separately until ready to cook.
