Dill Pickle Bread

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon dried dill weed
  • 3 large eggs
  • 1 cup buttermilk
  • 1 cup dill pickles (finely chopped and well-drained)
  • 1/4 cup melted butter (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the 9×5 inch loaf pan by greasing it and lining it with parchment paper.
  3. Mix the dry ingredients in a large bowl: flour, baking powder, baking soda, salt, and dried dill weed.
  4. Prepare the wet ingredients in a medium bowl by beating the eggs, adding buttermilk, and then folding in the chopped pickles.
  5. Combine the wet and dry mixtures gently until just combined.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a creamier flavor, consider adding shredded cheese or fresh herbs. Store in an airtight container for up to 5 days or freeze for longer storage.
