Chicken Ricotta Meatballs in Alfredo Sauce

  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 2 cups Alfredo sauce
  • Pasta or zoodles for serving
  • Extra parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, parsley, salt, and pepper in a large bowl.
  3. Form mixture into meatballs, about 1-2 inches in diameter.
  4. Place meatballs on a baking sheet lined with parchment paper.
  5. Bake for about 20 minutes until cooked through and golden.
  6. Heat Alfredo sauce in a large skillet over medium heat.
  7. Add meatballs to the sauce and simmer for 5-10 minutes.
  8. Serve over pasta or zoodles, garnished with parsley.

Notes

Make-ahead: Prepare meatball mixture a day in advance. Use an air fryer for a quicker cooking option.
