Delicious Carrot and Celery Soup: A Healthy Delight!

A healthy and delicious soup made with fresh carrots and celery, perfect for a light meal or appetizer.

Ingredients

  • 4 large carrots, chopped
  • 4 stalks of celery, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sauté until translucent.
  3. Add the chopped carrots and celery, cook for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let it simmer for 20-25 minutes until the vegetables are tender.
  6. Use an immersion blender to puree the soup until smooth.
  7. Season with salt and pepper to taste.
