500g white fish fillets
200g prawns, peeled
1 onion, chopped
2 cloves garlic, minced
1 tablespoon curry powder
300ml coconut milk
2 tablespoons flour
1 tablespoon olive oil
500g potatoes, peeled and chopped
50g butter
Salt and pepper to taste
Instructions
Preheat the oven to 200°C (400°F).
In a pan, heat olive oil and sauté the onion and garlic until soft.
Add the curry powder and flour, stirring for 1 minute.
Pour in the coconut milk and bring to a simmer.
Add the fish and prawns, cooking until just done.
Transfer the fish mixture to a baking dish.
Boil the potatoes until tender, then mash with butter, salt, and pepper.
Spread the mashed potatoes over the fish mixture.
Bake in the oven for 25-30 minutes until golden brown.
Notes
Feel free to use any white fish of your choice.
For a spicier version, add chili powder to the curry mix.
This dish can be made ahead and frozen before baking.
