Crockpot Sun-Dried Tomato Chicken Pasta: A Flavorful Delight!

  • 2 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups pasta (penne or rotini)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the chopped sun-dried tomatoes, chicken broth, heavy cream, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, cook the pasta according to package instructions.
  5. Once the chicken is cooked, shred it in the crockpot and stir in the cooked pasta and Parmesan cheese.
