Crockpot Beef Bourguignon: A Delicious and Easy Recipe!

Crockpot Beef Bourguignon is a rich and hearty French stew made with tender beef, red wine, and a variety of vegetables, all cooked slowly to enhance the flavors.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 slices bacon, chopped
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 8 ounces mushrooms, sliced
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the bacon until crispy. Remove and set aside.
  2. In the same skillet, brown the beef cubes on all sides.
  3. Add the chopped onion, carrots, and garlic to the skillet and sauté for a few minutes.
  4. Transfer the beef and vegetable mixture to the crockpot.
  5. Add the red wine, beef broth, tomato paste, thyme, bay leaf, and cooked bacon to the crockpot.
  6. Season with salt and pepper.
  7. Cover and cook on low for 8 hours or until the beef is tender.
  8. In the last hour of cooking, add the sliced mushrooms.

Notes

  • Serve with crusty bread or over mashed potatoes.
  • For a thicker sauce, you can mix a tablespoon of cornstarch with water and stir it in during the last 30 minutes of cooking.
  • This dish can be made a day ahead and tastes even better the next day.
