- 2 pounds beef chuck, cut into 1-inch cubes
- 4 slices bacon, chopped
- 1 large onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 2 cups red wine
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- 8 ounces mushrooms, sliced
- Salt and pepper to taste
- In a skillet, cook the bacon until crispy. Remove and set aside.
- In the same skillet, brown the beef cubes on all sides.
- Add the chopped onion, carrots, and garlic to the skillet and sauté for a few minutes.
- Transfer the beef and vegetable mixture to the crockpot.
- Add the red wine, beef broth, tomato paste, thyme, bay leaf, and cooked bacon to the crockpot.
- Season with salt and pepper.
- Cover and cook on low for 8 hours or until the beef is tender.
- In the last hour of cooking, add the sliced mushrooms.
Notes
- Serve with crusty bread or over mashed potatoes.
- For a thicker sauce, you can mix a tablespoon of cornstarch with water and stir it in during the last 30 minutes of cooking.
- This dish can be made a day ahead and tastes even better the next day.
