Crispy Strawberry Cheesecake Eggrolls

Delightful dessert eggrolls filled with fresh strawberries and creamy cheesecake, perfectly crispy and indulgent.

  • 1½ cups fresh strawberries, finely diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • Vanilla cheesecake filling
  • Eggroll wrappers
  • Oil for frying

Instructions

  1. Prepare the Strawberry Filling: In a bowl, combine the finely diced strawberries, granulated sugar, lemon juice, and cornstarch. Toss everything together thoroughly, allowing the mixture to sit for about 10 minutes.
  2. Make the Cheesecake Filling: Blend cream cheese, powdered sugar, and vanilla extract in a mixing bowl until creamy and smooth.
  3. Fill the Eggrolls: Lay out an eggroll wrapper on a clean surface and place spoonfuls of both fillings inside it.
  4. Roll and Seal: Roll up the eggroll tightly around the fillings, tucking in the sides and sealing the edges with water.
  5. Fry to Perfection: In a frying pan, heat oil over medium heat and carefully place the rolled eggrolls into the hot oil, frying until golden brown and crispy (about 3–4 minutes).
  6. Drain and Serve: Remove the eggrolls from the oil and let them drain on paper towels. Serve warm, optionally dusted with powdered sugar or with chocolate sauce.

Notes

Can be made ahead; store fillings in the refrigerator and assemble before frying. For a healthier option, bake at 400°F for about 15 minutes instead of frying.
