Crispy Potato Cheese Bombs

Delightful crispy potato bombs filled with gooey cheese, perfect for game nights or gatherings.

Ingredients

  • 4 cups Potatoes (starchy varieties like Russets)
  • 1 cup Sharp or Medium Cheddar Cheese
  • 1/2 cup Parmesan Cheese
  • 1/4 cup Fresh Parsley
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Paprika or Chili Flakes (optional)
  • 1 cup Breadcrumbs or Crushed Cornflakes
  • 1/4 cup Unsalted Butter
  • 2 cloves Garlic (minced)

Instructions

  1. Boil the Potatoes: Peel and cut potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and cool slightly.
  2. Mash the Potatoes: In a mixing bowl, mash potatoes until fluffy.
  3. Mix in Cheese and Seasoning: Stir in cheddar, Parmesan, parsley, salt, black pepper, and optional spices until well combined.
  4. Shape the Bombs: Roll mixture into 1 to 1.5-inch balls and place on a parchment-lined baking sheet.
  5. Coat with Breadcrumbs: Roll the balls in breadcrumbs or crushed cornflakes until well-coated.
  6. Melt the Garlic Butter: In a saucepan, melt unsalted butter over medium heat, add minced garlic and sauté until fragrant.
  7. Bake or Fry: Bake at 400°F for 20-25 minutes, or fry in oil until golden.
  8. Serve and Enjoy: Drizzle remaining garlic butter over bombs before serving.

Notes

Make-ahead by preparing potato mixture in advance. Can also be customized with different cheeses or spices.
