Crispy Malibu Chicken features tender chicken coated in a golden crust, layered with savory ham and melted Swiss cheese, drizzled with honey mustard for a deliciously satisfying meal.

  • 4 boneless, skinless chicken breasts
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • 1 cup breadcrumbs (preferably panko)
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1/4 cup honey mustard sauce
  • Salt and pepper to taste
  • Oil for frying (canola or vegetable)

Instructions

  1. Preheat the oven to 375°F (190°C) if you plan to bake your chicken instead of pan-frying.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Dredge each chicken breast in flour until well-coated.
  4. Dip the floured chicken into the beaten eggs.
  5. Coat each piece with breadcrumbs, pressing gently to adhere.
  6. Heat oil in a skillet over medium heat until shimmering, then place each chicken breast and pan-fry for about 4-5 minutes on each side.
  7. Alternatively, place the breaded chicken on a lined baking sheet and bake for 25-30 minutes.
  8. Top each piece with a slice of ham and Swiss cheese, then return to the oven for a few minutes until the cheese melts.
  9. Drizzle with honey mustard sauce just before serving.

Notes

For best results, consider assembling the chicken and coating it the night before. You can also use an air fryer for a healthier version.
