Crispy Garlic Parmesan Potatoes

Delightfully crispy garlic Parmesan potatoes are a comforting side dish packed with flavor, perfect for any meal.

Ingredients

  • 2 pounds of baby potatoes
  • 4 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 cup of grated Parmesan cheese
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of dried oregano
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the baby potatoes and cut them in half.
  3. In a mixing bowl, combine the olive oil, minced garlic, salt, pepper, and oregano.
  4. Add the halved potatoes and toss to coat.
  5. Spread the potatoes on a baking sheet in a single layer.
  6. Sprinkle grated Parmesan cheese over the potatoes.
  7. Bake for 25-30 minutes, tossing halfway through, until golden brown.
  8. Garnish with fresh parsley and serve warm.

Notes

For extra flavor, soak cut potatoes in cold water for 30 minutes before roasting. Can be made in an air fryer for quicker cooking.
